Pancakes, Take 3 - Ghana & Gibraltar
It's been awhile since I posted about pancakes, but I've become semi-consistent in eating pancakes once again. My pancake travels have recently taken me to Ghana followed by Gibraltar. Unfortunately I can't seem to find the pictures I took while making pancakes for either of these two countries. So, I'm going to post the video I followed for Ghanian pancakes, and a link to the website I used for pancakes from Gibraltar.

In Ghana, the pancakes are thin and crepe like. I really enjoyed the nutmeg flavor of these pancakes. The taste of them reminded me of a family sugar cookie recipe that my mom made for us growing up. Below is the video. For the full printed recipe, click here.

Gibraltar
For Gibraltar, I opted for a less traditional pancake. While doing the research for Gibraltar, I discovered a website called Momma Lotties. This website is run by a gentleman named Justin, and he focuses on cuisine from Gibraltar. The pancake I opted to make is called calentita. It's a baked pancake like some of the other pancakes in Europe that I've made. This particular pancake is made from chickpea flour. To accompany the pancake, I made shakshouka (recipe also from Mama Lotties' website), which is a dish where you poach eggs in a tomato sauce. This particular version of shakshouka had lots of bell peppers in it, which I didn't think the I would like. However, I ate all of them and went back for more.
I have to say, I didn't enjoy the calentita. In fact, it ended up in the trash. I think either it is an acquired taste or I didn't put enough salt and pepper in it. Either way, I didn't enjoy it.
