Tule homme jälle AKA Estonian Come Again Tomorrow Pancakes

As we continue to slowly make our way through the Es, we now find ourselves in Estonia.  Here we learned that they call their pancakes Come Again Tomorrow.  Apparently this is because they are so good that whoever eats them will want to come again tomorrow to eat them again.  With this in mind, we surely hope it's true, and we begin making tule homme jälle.  These are a stuffed savory pancake, so you'll need to make sure to make the filling for these before you make the actual pancakes.  To make these you will need the following:

Filling:

1 tablespoon oil
1 medium onion, chopped
1 pound of minced meat (we used veggie ground soy)
1/2 cup of stock (use beef stock if you're using ground beef, chicken for ground chicken, or vegetable stock if you're going the veggie route.  We used vegetable stock)
2 tablespoons of fresh parsley, chopped
salt and black pepper to taste

Pancakes:

3 eggs
a little less than 1/2 cup of flour
10 ounces of milk
pinch of salt

Topping:

Grated parmesan cheese

First you'll need to cook up your onions in the olive oil.  Cook them until they are soft.  Next you'll add your choice of ground protein and cook thoroughly.


While you're cooking up the onions and protein, chop the parsley.


Once the protein and onion are thoroughly cooked, add in the parsley, stock, salt, and pepper.  Stir and cook until you have a moist, but not wet mixture.


Now we're ready to make the pancakes.  First preheat your oven to 400 degrees F.  Place the eggs in a bowl and lightly beat them.


Next place the rest of the ingredients in the bowl with the eggs and whisk them together.


Once everything is whisked together, you're ready to ladle some of the batter into a pan.  We used a crepe pan.



 We found this to be a VERY delicate batter, and we had difficulty flipping it.  The first one we were able to flip.


 We weren't so lucky with the next three pancakes.  This is what happened:


 After much frustration, we decided to go ahead and spray some oil on the pan.  The original recipe didn't call for oiling the pan, but we found that we had much better results with the pancake once we started oiling the pan.  It was still delicate, but at least we could get them flipped without them falling apart.

 Once you've used up all of the batter to make the pancakes, you're ready to start adding and rolling the filling.  We used about 1/2 cup of filling per pancake.


After rolling each pancake, place in a baking dish.


 Once you've stuffed and rolled all of your pancakes, sprinkle the top with parmesan cheese.


Now place it in the oven for about 5 minutes, or until the cheese has melted.  When you take it out, this is what you will have:


Sprinkle with parmesan and serve with a salad.


 These things were yuuuuuuummmmmy!  I was so sad we didn't have leftovers for me to eat for lunch during the week.  These definitely lived up to their names:  Come Again Tomorrow Pancakes!
