Yummy or not Yummy, that is the question we ask in the Dominican Republic

Today's pancake travels take us to The Dominican Republic, which like Dominica, is in the Caribbean.  However, unlike Dominica, The Dominican Republic is one of two countries on the island it exists on.  Roughly half of the island belongs to the Dominican Republic, and the other half belongs to Haiti.

We quickly learned that in the Dominican Republic they eat a type of pancake called arepitas de maiz, or in English, little corn arepas.  These were very quick and easy to make, and they required very few ingredients.  For once, we had all of the ingredients in our cabinet and didn't have to go out searching for any special ones.  Woohoo!

Now without further ado, here's what you'll need to make arepitas de maiz:

1 cup of cornmeal
1/4 cup of milk
1 1/2 teaspoons of sugar
3/4 teaspoons of salt
1 teaspoon of aniseed
2 large eggs
oil for frying

In a bowl, beat your eggs with a whisk.


O.K., the white spot in the eggs is not a shell, just an odd reflection of the light.  After beating the eggs, add all of the rest of the ingredients to the bowl and give them a whisk until thoroughly combined.


This is what you will have once they are combined.  Something that isn't quite dough like, but isn't quite batter like either.


Next, place about half an inch of oil into a pan and heat.


Of course, Sam took pictures of the dogs while we waited for the oil to heat.  However, for once, Harvey wasn't bothering Mac or laying on top of him.



Once the oil is heated, take a tablespoon of your pancake mixture and place it in the oil.  You'll have to press it flat to get a pancake shape.


Cook until golden brown and then flip.


Once it's golden brown on both sides, remove from oil and place on cooling rack to allow excess oil to drain off.


They're ready to eat!

The answer:  Not so yummy.  I'm sure that the recipe is probably just fine, as ours look like every other picture I've seen of arepas.  I think that Sam and I just aren't big fans of the arepa; especially since this is the 4th time we've made them, and out of all of those times, there was only one time where we thought they were edible.  The flavor of these was fine, they were just dry, as I've found most arepas to be.  They were so dry, Sam couldn't even swallow them.  I wish I had the camera in my hand to capture the look on his face at the time.  Our tummies were very happy to have already been filled with a smoothie earlier in the morning.  If you like arepas, go ahead and give these a try.
