Ack! We Once Again Find Ourselves Behind on Pancake Blogging

So, here we are, once again behind on pancake blogging.  This is a short blog to fill you all in on what's been keeping us from our pancake travels.  We last ended in Denmark, where we had yummy Danish aebleskivers.  From there, we were on our way to Djibouti; however, it took us a long time to get there.  We meant to get there towards the end of July, but we were unable to make our final destination due to not being able to find berbere spice mix or sauce.  Also, we were trying to do all of our last minute stuff before going on our real travels in August.

Now, on to August.  The month of August found us in Ecuador for the majority of the month.  While here, we did have pancakes one time, in the town of Mindo.  However, these weren't what one would call traditional Ecuadorian pancakes.  They were more like American pancakes.


However, we had a lovely chocolate sauce, as well as a ginger sauce with them.  In addition we had some home made ginger ale.


On one of our layovers back home from Ecuador, I ordered what I thought was the right spice mix online.  However, once it was delivered, I discovered this is what I ordered:

 

Ack!  The wrong spice.  So now we had to order the right spice and wait until it got to us.  Well we did, and we received it, but then I started back to work (with 39 5 year old children in my classroom) AND there was a terrible heat wave at the same time.  Needless to say, there wasn't much cooking happening in our air conditioningless home.  In fact, we took the dogs to a local hotel on the hottest weekend just so we could have some air conditioning to cool us down.

It finally cooled off a bit, and I got back into the swing of work routines.  Now we have time to catch up on our pancake travels.  Next stop, Djibouti - I hope you join us on our journey.

Tule homme jälle AKA Estonian Come Again Tomorrow Pancakes

Pancakes = E Squared - I'm on to Eritrea and Ethiopia

I'll start this post off by saying I forgot to mention in my last post on Estonia why I skipped Eritrea and moved on to Estonia.  The reason for this was because I couldn't find teff flour anywhere locally.  Also, because the Eritrean pancake batter takes 3 days to ferment, and I just didn't have the time to do this, I decided to move on to Estonia temporarily. However, this weekend I not only had my teff flour in hand, but I also had the 3 days it takes to make these pancakes.  So I'm now off to Eritrea and Ethiopia.  I've decided to consider these pancakes both Eritrean and Ethiopian for many reasons.  Here they are: Eritrea and Ethiopia both make a bready pancake called injera. Amusing Things I Run Across in My Pancake Research

While I am still only in the A countries of the world, I have run across a few weird and funny things as I research each country's pancakes.  I shared one a few weeks ago when I talked a little bit about Antarctica.  Remember, I found a link to a fake (I think) Antarctica university that serves penguin in their dining hall? I started doing some research for my last A country tomorrow, and in the process, discovered these two videos.  They are by a person who goes by the name GiR2007 on You Tube.  I thought they were amusing, and I decided to share them with you as a pre-Sunday treat to some pancakes.  Enjoy!
